Emphasis on nutrition education and counselling skills is important in the educational progress of future nutritionists. It requires a combination of nutritional expertise and psychological understanding for nutritionists to work in clinical or community settings. Well-developed nutrition education and counselling programs have been shown to reverse issues related to dietary adherence. In this unit, the students will explore the psychological theories and health models that underpin the understanding of human health behaviours, development of nutrition education and counselling skills.

Learning outcomes
- Identify components of counselling skills and its influence on individuals.
- Describe theories and models that influence nutrition education and counselling processes.
- Illustrate counselling skills for a target individual or group.
- Identify appropriate communication methods in approaching an individual or group for nutrition education or counselling purpose.
- Exhibit consideration towards the influence of cultural background, experiences, attitudes, and biases that could influence outcomes of nutrition education and/or counselling.
Workload
An average of 6 hours of teacher-directed study per week, including 2 hours of lectures, 2 hours of workshops per week and 3 hours of practical every fortnight. 6 hours per week of self-directed study. Total per week = 12 hours
